The mastiha sap falls from the tree in droplets known as ‘tears’ and these are allowed to harden naturally into crystals before they are harvested. On Chios they describe them as “a tear that pleases, perfumes, relieves and heals”. Mastiha has PDO status (Protected Designation of Origin) and is exported all over the world. It has many applications including as a food ingredient, in pharmaceuticals and cosmetics.
